  • Guests will be introduced to a Quebec tradition: maple sugar taffy, the country’s best maple syrup on snow (“tire sur neige”) made in true Quebec fashion.
  • Our chef will be pleased to offer a complimentary sampling of its new winter signature dish: Icewine fondue.

LES 3 SOIRÉES MÉMORABLEBetween October 2008 and February 2009, Chez Victor is teaming up once again with four top VQA Ontario wineries and restaurants to offer you a taste of the best food and wines from Ontario. Guests at Chez Victor can choose from a special menu created by executive chef David Chrystian and the featured winery’s chef, and meticulously paired with the estate’s wine.

The five-course tasting menu with wine pairings will begin with an intimate reception at 7:30 pm followed by dinner at 8:00 pm

Menu price is $120 per person, taxes and gratuities are extra.

Consultant winemaker Andrzej Lipinski, one of the most celebrated winemakers in the country, is tasked with producing the finest wines he can from the estate property, regardless of the hurdles.

Located in an historic winery building dating back to 1871, Cave Spring Cellars boasts the oldest functioning wine cellars in all of Ontario, making it one of Niagara's most mature vinifera vineyards.

For nearly twenty years Angelo Pavan has guided winemaking at Cave Spring Cellars, crafting wines of authentic character and sophistication from the fruit of Ontario’s Beamsville Bench. Combining passion and respect for Niagara Peninsula viticulture, Angelo has helped pioneer winemaking from noble European grape varietals in Ontario.
